What are my chances of getting into Wake Forest University, Emory University, and Vanderbilt University?

You have a great background, and IB will really help you, but I would recommend retaking the SAT. That is a HUGE determininng factor of getting admitted (esp. at Emory and Wake). If you can boost that up I would say you have a fantastic shot of getting in.
